Sambar is an authentic and popular South Indian dish usually served with Idli, Dosa, Medu Vada, and Rice. It is cooked with arhar dal and vegetables like pumpkin, drumsticks, tomatoes, onions, and tamarind juice with a seasoning of mustard and curry leaves. However, the main ingredient without which the sambar is incomplete is Sambar Masala. Sambar Masala is a coarse mix of roasted spices like coriander seeds, cumin seeds, mustard seeds, black peppercorns, dry red chilies, fenugreek, cinnamon, dry coconut, chana dal, etc. In the Southern part of India, they add it with vegetables and lentils while preparing various types of sambars to enhance its flavor.
