Zucchini Fritters and Avocado Dip with Hemp Seeds for Breakfast 🌱You box includes:

  • 2 cups zucchini (grate it)
  • Microgreens for garnish
  • Avocados for dip
Here is a suggested recipe for bite-sized and packed with flavour. We love having these with a creamy avocado dip, sprinkled with hemp seeds (very hipster!). 
Ingredients:For the fritters
  • 2 cups zucchini (grate it)
  • 1/2 cup besan (chickpea flour)
  • 1 tbsp flax seed powder
  • 2 tsp nutritional yeast (optional)
  • 1/2 tbsp coconut oil
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic powder
  • Oregano
  • Salt & Black pepper
For the dip
  • 1 avocado
  • 1/4 cup coconut milk
  • Salt to taste
  • Handful of fresh dill/microgreens
Instructions:
  1. Sprinkle some salt in grated zucchini and mix well.
  2. Squeeze out excess liquid from the zucchini and put it in a mixing bowl.
  3. Mix all the ingredients well. Adjust salt.
  4. Roll it into bite-sized balls and flatten it gently.
  5. Heat a pan and grease it with oil.
  6. Cook the fritters till they are golden brown on both sides and its edges
  7. While the patties cook, make the dip- add avocado, coconut milk, dill and salt to a mixer and blend into a dip. Sprinkle hemp hearts
