  • Fettuccine (whole wheat/traditional)
  • 10 asparagus (bottom half chopped off)
  • 2-3 portobello mushrooms, sliced
  • 2 tablespoons parsley
  • 3 cloves garlic, minced
  • 1/2 cup olive oil
  • Pinch red pepper flakes
  • 2 tsp lemon
  • Salt Pepper to taste
  • Chilli oil to garnish (optional)
Preparation
  • Bring a large pan of water to boil and add 2 tsp salt in it. Add spaghetti just when the water starts to bubble. Cook until soft and then drain out the water.
  • Simultaneously, in another skillet, sauté the mushrooms until they wilt and turn black as shown in the picture. Remove them from the heat and now sauté the asparagus tops for about 5-10 minutes (as shown in the picture).
  • In a separate pan (no heat), combine minced garlic and olive oil. Now cook over low heat for 10 minutes to slightly roast garlic until golden. Now add the remaining ingredients including the boiled spaghetti and stir until well combined. Add Parmigiano cheese over the top if desired.
  • I garnished it with homemade chilli oil and sesame seeds
